This dish is not just a staple in our home; it’s won over the hearts (and stomachs) of friends and family alike!


What I love about this recipe is how easy it is to whip up. With just a few ingredients, you’ll have a delicious soup that is even better the next day. Seriously, there isn't a time we wasted even a drop. A quick reheat makes it taste even better the next day.

Here’s how to make Corby's award-winning Cheesy Chicken Enchilada Soup:


Ingredients:

- 1 tbsp. Olive oil

- 1 large onion, chopped

- 1 green pepper, chopped

- 10 oz. red enchilada sauce

- 8 oz. cream cheese

- 14 oz. can diced tomatoes

- 1 cup black beans, drained and rinsed

- 1 cup frozen corn

- 2 cups chicken, cooked and cubed

- 1 cup chicken broth

- 2 cups mozzarella cheese, shredded


Instructions:

1. Heat olive oil in a soup pot over medium heat. Add the onion and green pepper, cooking for about 5 minutes until the onion is soft and translucent.

2. Stir in the enchilada sauce and cream cheese, breaking down the cheese until it melts into a creamy mixture.

3. Add the diced tomatoes, black beans, and corn; stir everything together.

4. Mix in the cooked chicken and chicken broth. Stir and allow the soup to cook for about 10 minutes until it’s hot (but be careful not to let it boil). If the soup is too thick for your liking, add more broth until you reach the desired consistency.

5. Once heated, remove from heat and serve topped with shredded mozzarella.
